Every night the boys come over to my house for dinner. Either Aunt Jacqui or I prepare dinner. I’m trying my hand at a lot of Ugandan dishes. A few weeks ago I soaked, boiled, and fried my first Ugandan style beans. I was surprised when the boys said the beans were so good! The next week I prepared one of my favorite Ugandan dishes, katogo, for dinner. Katogo is matooke that is peeled, and then boiled. Ground Nut sauce is prepared separately with onions, tomatoes, garlic, some vegetables and spices. When the matooke is soft the g-nut sauce is added and then brought to a boil. It is served over rice. Katogo is a very tasty dish! The boys really enjoyed it because, as you see from the picture, they couldn’t get enough. Rock had 3 heaping plates full and David and Travis were licking the sauce pans! Guess I’m becoming a good Ugandan cook and mama! hehe
